Chicken Mediterranean linguine is one of my all time favorite pasta dishes! I was first introduced to this treat from the restaurant Earls, and I admit that I have been completely smitten since. After a decent amount of time spent browsing the web in hopes of a similar recipe, I stumbled upon this easy but tasteful one.

Happy Friday Everyone!

Every week when we get closer to our beloved weekend, things tend to get a little hectic. We don’t always have time to stop for that latte or double-double. I recently purchased Starbucks VIA Ready Brew for the girl on the go. I love it! I picked the caramel iced coffee flavor which is perfect for summer. Just pour, add water and top off with  ice cubes. Voila!

After a huge debate today with my boyfriend on whether I am a pack rat or not, I trudged away with complete self-assurance that I am not. I thought to myself “how can he not appreciate my hundreds of notes saved from elementary school and my ever-growing collection of Archie comics.” While continuing to pack our things, my confidence dwindled after I came across parts of an easy-bake oven and a musical ABC’s children’s book. Hmmm maybe I do like to hold onto things a little bit too long?!?! However, I did come across one thing that I convinced him to let stay, my ‘Best of Kids Cooking’ cook book. Although it hasn’t been used in years, I now know why it’s travelled with me from place to place. The book is easy to read and let’s be honest, who doesn’t love pages filled with colorful pictures. So tonight I put the book to use and made us both an enjoyable baked macaroni!

I have been extremely busy this past month with starting two new jobs and making  preparations for my big move. With all this going on, you could say I have taken a cooking hiatus. I have enjoyed way too many burgers…..with fries…..topped off with my beloved dipped cone from the neighborhood DQ. I miraculously have tonight off and have jumped at the chance to finally make a home cooked meal. Over the past year I have been secretly collecting recipes I stumbled upon in hopes that one day I’ll be able to master them all. This particular recipe was perfect for tonight as it is healthy, light and easy to make. This salad can be enjoyed with a chilled glass of white wine or a tasty tea.

I have been waiting for it to get “summery” here in Vancouver and with my wish not being fully met I went ahead, got some pops recipes and made it feel like summer on my own. These Popsicle recipes I have below are easy enough to do on your own, however, it is fun to round-up a friend or family member,get creative and make a day of it! I can’t tell you how exciting it is to come home and remember you have delicious ice-cold pops in your freezer waiting to be devoured.



Mocha Popsicles

Vanilla ‘Whip’ Tip
1/3 cup whole milk
1 tablespoon sweetened condensed milk
1/4 teaspoon vanilla extract

Mocha Popsicle
1 3/4 cups strongly brewed coffee
1/3 cup sweetened condensed milk
1 teaspoon unsweetened cocoa powder

Pour about 1 tablespoon of the white tip mixture into each popsicle mold and freeze until solid.


Strawberry Orange Juice Pops


1 – pack of strawberry jello – regular
1 – cups of apple juice
1 – cup of orange juice
1 – 1.5 cups of strawberry puree
12 popsicle sticks
Popsicle making tray / cups

To make strawberry puree
3 cups sliced fresh strawberries + 1/4 cup of honey.


Stir all liquids together in a blender with the jello and pour into popsicle trays or cups. Put into freezer, add popsicle sticks, & freeze until ready to enjoy!
